The chutney is made with tandoor-roasted onions that are ground by hand. The sweet, smoky onions are tempered with ginger, curry leaves and black onion seeds.
This spicy chutney is a delicious dip for crackers and crudités. You can spread it on sandwiches or mix with oil to marinade lamb and paneer.

- Mix the chutney with grated cheese, finely chopped onion, chilli, coriander, black pepper and an egg.
- Spread the mixture evenly on white bread.
- Cook for 5-7 minutes under the grill until the cheese is melted and golden.
- Cut into triangles and serve with leftover chutney for dipping.
