Add Sabarot white lingot beans to rustic soups and stews. They’re small and tender with a mild, creamy flavour. The beans become soft and plump as they cook, soaking up the flavours around them.
In France, lingot beans are used to make cassoulet. This slow-cooked stew includes pork, Toulouse sausages and confit duck – sometimes all three! The mellow white beans are a perfect base for the rich meats.
Add these versatile white beans to salads or blend them with garlic for a creamy dip. They’re great in Spanish stews and one-pan dinners with chicken or fish.
Preparation: Soak overnight, then boil in a large amount of water for around 90 minutes. Drain once the beans are tender.
